A Chocolatey Treat That's SUPER EASY!!

About this time last year my husband came home from work RAVING about a treat that a co-worker's wife made for everyone. I knew they had to be good, because instead of bringing me one home to try - he brought me the recipe AND the stuff to make it!

I've heard these called many different names.. OREO BALLS.. OREO TRUFFLES.. OREO CHEESECAKE BITES.. No matter what you call it.. these bad boys are DELICIOUS!

Here is your ingredients list:

1 package of Oreos
(I prefer the plain regular Oreos although they do have a Peppermint Oreo out now for the holidays and I intend to modify this recipe a little and see what I can come up with)
2 packages of Cream Cheese
(Do NOT get the Fat Free Cream Cheese. The balls will not set up right and it's a mess. Besides you are mixing them into a WHOLE bag of Oreos.. who's worried about a few calories?!)
1 package of Chocolate Almond Bark (or a couple of cups of milk chocolate chips)

First things first.. Take a whole bag of Oreos

Chop them up in a food processor - or blender - or throw them into a plastic freezer bag and get to smashing. I use my blender.
Once they are all crushed into Oreo crumbles put them into a big bowl to mix with the cream cheese. I use my stand mixer, but you could do this by hand with a little muscle.

Next, add two softened packages of cream cheese to the Oreo crumbles.

Switch your mixer on, or get to mixing and mashing.

Eventually, you will have a Oreo dough. Like this..
 Scrap down the sides of the bowl and make sure that your cream cheese is mixed in well. It's not as tasty to have a big cream cheese bite.

Then you will take a spoonful of the Oreo dough and roll them into a ball. I usually sit them on wax paper as I finish rolling them. You'll need the wax paper later, so this saves you washing a plate or cookie sheet that's covered in Oreos and cream cheese.

Once all of the Oreo dough is rolled into balls, you'll need to melt the chocolate. Be careful to follow the directions exactly. Some packages will prefer microwave, some stove top or double boiler. No matter what method you use, keep a close eye on your chocolate. If it gets too hot it'll caramelize and ruin the whole batch. If you have never melted chocolate before, you may want to start with a small amount.

Next, you'll dip, roll, or otherwise submerge your Oreo balls into the chocolate. Once you remove from the chocolate, place back on the wax paper. Remember to be careful. The chocolate is very warm and can burn you easily.

Now, you can decorate your Oreo balls in anyway you like. I like to melt a handful of white chocolate chips in a small bowl and then drizzle them over the balls. They look pretty and the white chocolate covers any mistakes in your chocolate covering.

These are always a big hit and don't take much time at all to put together. Start to finish is about half an hour and costs about $6 for the whole batch. They look like they are hard work and taste like it too!


In the extreme craziness that is Thanksgiving, I failed to blog.

This year I have a lot to be thankful for. We had Thanksgiving in our own home for the very first time. Almost all of our family was here around one table. (Thank you Ashley Furniture! And you're welcome for spending a ton of money on a HUGE table for our new house that will fit almost all of our family.) My little brother was here and spent the night at our house with us. It was a lot of fun to spend time with him. My husband played Xbox 360 with him, and I think they bonded. Nothing like a head-shot on Call of Duty 2 to bring guys together. We had an enormous amount of food.

Ok.. so even as obscene as that looks.. I think I forgot something. It was crazy! And leave it to Memphis weather.. All week leading up to Thanksgiving it was in the 70s and sunny with a warm breezy. Thursday rolls around and it rains HARD all day and it's COLD rain. We all made it here in one piece and that's what really matters.

We were missing my brother-in-law and his family this year. They recently moved to the west coast, but we were able to video chat with them after dinner and that was nice for everyone. It's definitely not the same, but it's better than nothing.

I was also thankful that Wednesday night before Thanksgiving my BFF and her family came by. I got to see all of my godbabies. It was definitely a blessing! They are all growing so fast!

This is such a beautiful time of year to me. A time when we all come together for the sake of being together and loving each other. Thanksgiving has always been a favorite of mine.

How did you spend your Thanksgiving holiday?




I think Memphians flock to Bryant’s Breakfast for the atmosphere as much as the DELICIOUS food. Located on Summer Ave. near North Graham (next to Nagasaki), this is one of those places that you start craving (usually when they are closed.. Normal hours are 4:30am to 2pm) and nothing will stop the craving
except one of their light, fluffy biscuits. If I didn’t know better I’d think they had my grandmother in the back cooking them up all morning.

As Fate would have it, my BFF Sunny and I ended up with the same morning off work, so we put it on each other’s schedules, and began the daydreaming of grits and gravy. When that morning FINALLY rolled around, I already had my mind set on exactly what I wanted to eat, and not surprisingly.. so did Sunny. My only hang-up was what to drink. It was cold outside, so I really wanted coffee, until Sunny reminded me how phenomenal the sweet tea is at Bryant’s. If you are a true Southerner, you know what really good sweet tea is, and this place has it.

We were greeted by a long but courteous line of people waiting for their chance to place their order and pay for their breakfast. Bryant’s feels like a diner inside. There are rows of tables and booths. You place your
order and pay at the counter, and then like magic, your food appears at the table. The menu is on the wall behind the counter, and I’ve never had anything there that wasn’t delicious.

I always order the SCRAMBLE – It’s 3 scrambled eggs, onions, mushrooms, tomatoes, green peppers, cheddar cheese and your choice of meat (sausage, bacon, city ham, country ham, pork tenderloin, philly steak, or country fried steak) served with 3 biscuits, gravy, and grits. It’s sort of like an omelet but scrambled. Ha!

Sunny always gets the veggie omelet. It’s eggs, mushrooms, onions, tomatoes, green peppers, and American cheese also with 3 biscuits, gravy, and grits.

The website (http://www.bryantsbreakfast.com/) has a full menu with prices. Our meals broke down with a drink and tax to about $10 each.. give or take. Bryant’s is always delicious and always crowded so go early or at least during the week. Let me know your experience with Bryant’s below..
